All right, for those of you nearing your birthdays and have a family that's willing to make you a birthday meal, here is the best chocolate cake recipe ever known to man.

I gave this recipe to Kewbie and some other guy (I forget, but he had his mom make it RIGHT when I gave it to him, hehehe). I don't know if Kewbie has made it yet; I haven't really talked to him recently.

Anyway, this is the cake I'm known for around my neighborhood, I hope you can share the joy of this cake Wink

Chocolate Cream-Cheese Cake

Ingredients for the Filling:
12 ounces cream cheese, softened
1/2 cup sugar
2 large eggs
1 teaspoon vanilla
2 tablespoons all-purpose flour
12 ounces semisweet chocolate chips

Ingredients for the Batter:
3 cups all-purpose flour
2 cups sugar
6 tablespoons unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons apple-cider vinegar
3/4 cup corn oil

Ingredients for Glaze:
3 squares (1 ounce each) unsweetened chocolate
4 tablespoons butter
1 1/2 cup powdered sugar
1 teaspoon vanilla
3 tablespoons hot water

Initial Instructions:
Line the bottom of a buttered 12 by 2 inch round cake pan
with a round of wax paper, butter the paper, and dust the
pan with flour, knocking out the excess.

Instructions for filling:
In a bowl cream together the cream cheese and the sugar,
add the eggs, 1 at a time, beating well after each addition,
and stir in the vanilla, the flour, and the chocolate chips.

Instructions for batter:
In a large bowl whisk together the flour, the sugar,
the cocoa, the baking soda, and the salt.
In a bowl, combine the vinegar, the oil, and 2 cups of water.
Stir the vinegar into the flour mixture until the batter
is just combined and pour the batter into the prepared pan.

Spoon the cream-cheese filling onto the batter by dollops,
leaving a 1-inch border around the edge of the pan
(it usually covers the top for me, but do your best),
and swirl it into the batter with a knife.
Bake the cake in the middle of a preheated 375 degrees Fahrenheit
oven for 45 to 55 minutes. or until it pulls away from the
side of the pan and the center is just set.
Let the cake cool in the pan on a rack and turn it
out onto a platter. Remove the wax paper and let the cake cool completely.

Pour the glaze onto the cake and with a spatula spread it
evenly over the top and side. Chill the cake for at least
2 hours or overnight (better choice). Serves 16 to 20.

Instructions for Glaze:
Melt the butter and chocolate in the microwave or atop a stove.
Turn off burners, (or take it out of the microwave, and...)
Add the vanilla, sugar, and water to desired consistency.

this cake is different from any other. It's not floofy or pooey crap. It has a rich, thick batter with a hard glaze. Oh man.... it's orgasmic even.

But the recipe looks good except for the cream cheese. I don't know why I don't like it; maybe it has something to do with early childhood experiences with airline cream cheese or something (I have no clue why they served it either...) If I get a big ol' hacker appetite some night, I'll whip up a batch sans cheesus Philadelphiaus and see how it tastes. Smile
You don't really taste the cream cheese, it just makes the batter really thick and creamy :bounce:
