Just saying "hey let's code some AI" is just as vague as saying "hey let's go somewhere". Think of a purpose you want to achieve and then read up on existing aritficial intelligence paradigms. "AI" is such an abused and vague term.

In my opinion, the hardest part of all of this is probably finding a use and devising a goal that you want to acheive.
Simple idea for a project though: make a basic optical number recognition program; train a basic neural network with the digits it is supposed to learn and then try to feed it those images with random noise added.
